A Brief History on Ice Cream Sandwich:
Origin: The ice cream sandwich began in the late 19^th century as “hokey pokeys,” sold by street vendors in New York City. These early versions had ice cream between two pieces of paper and cost a penny. Over time, vendors switched to using sponge cake and graham crackers as the outer layers. In the 1940s, Jerry Newberg created the modern ice cream sandwich with vanilla ice cream between chocolate wafers, making it popular at events like baseball games. Variations such as the Oatmeal Cookie Ice Cream Sandwich and Chipwich also emerged. Similar treats exist globally, like the “sánguche helado” in Uruguay.

Celebration: An ice cream sandwich is a chilled treat made up of ice cream placed between two biscuits, wafers, soft cookies, or various other baked items. The components vary globally, with Ireland favoring wafers while the United States typically opts for cookies. The reason these ice creams maintain their form without melting is probably attributed to additives that reduce the melting speed, such as gums like mono-diglycerides. Gums are frequently used in ice cream as they help to slow down melting and enhance the creaminess and smooth texture of the ice cream.
