A Brief History:
Origin of Pie: The history of the pumpkin originates from North America. It was one of the first exports to France, from which it made its way to Tudor England, where the flesh of the “pompion” was readily embraced as a filling for pies. The Columbian Exchange is recognized for facilitating the combination of ingredients essential for the creation of pumpkin pie. History of all pie has roots going back all the way to ancient Egypt and Greece. Ancient 9500 B.C. Egyptians made a pie that included a honey filling that was encased in a crusty cake made from barley, oats, rye and other basic ingredients of those days. The ancient 5th century B.C. Greeks ate pie (known as Artocreas or Aristophanes) which was made with a savory type of sweetmeat served up in in an open pastry shell. The Romans may be the first to create a pie that included both a top and bottom crust.

Why Pumpkin Pie? Pumpkin pie is a classic dessert commonly served during the autumn and winter seasons, particularly at Thanksgiving and Christmas gatherings in the United States. The pumpkin serves as a representation of the harvest. Pumpkin pie emerged as a well-known component of the Thanksgiving feast in the early seventeenth century, following its introduction to New England by the pilgrims. The original preparation involved hollowing out the pumpkin, filling it with apples, spices, and sugar, and subsequently baking it in its entirety.

It’s in the Book: Pumpkin pie recipes can be traced back to seventeenth-century English cookbooks, including Hannah Woolley’s 1675 work, The Gentlewoman’s Companion. A century later, these recipes started to emerge in American cookbooks.
