A Brief History:
Origination: Barbecue ribs have a complex history with roots in the Caribbean, Spain, and the United States.

  • Caribbean: Centuries ago, the Indigenous peoples of the Caribbean developed the art of barbecue by smoking meat with spices for long periods of time.
  • Spain: The Spanish word barbacoa may have originated from the Tyo people’s method of using a wooden framework to slow-cook meat over a fire. Christopher Columbus encountered this technique in 1492, which helped bring it to Europe. Spanish conquistadors then brought barbecue to North America, where it took root.
  • United States: In the 19th century, barbecue spread to the American South, where pork was often used due to the region’s abundance of pigs. Barbecue became popular for community gatherings because it allowed for cooking large amounts of food at once.
  • 20th century: Barbecue ribs as we know them today are a 20th-century innovation. For example, in St. Louis, steamboat cook Henry Perry began slow-smoking discarded ribs from Kansas City stockyards using local hardwood trees over a century ago. In the U.S., cooks began selling barbecued meats on street corners and in courthouse squares, eventually expanding into permanent restaurants.
