A Brief History:
Origination: National Carrot Cake Day celebrates both carrot and the cake that goes with it. Carrot cake began in Europe during the Middle Ages to sweeten desserts when sugar was rare. It has become a popular dessert in America. The first carrot pudding recipe is from Switzerland in the 10^th century. Carrots replaced sugar in various desserts, which were often steamed or boiled and included spices, flour, and eggs. In medieval times, carrots were utilized to prepare a steamed or boiled pudding that served as a fundamental dish at banquets.

United States Evolution: The American origin started out with carrot cake has been part of American history since colonial times, experiencing changes in popularity. It was served at France’s Tavern in New York City to mark the end of the American Revolution. In the early 1800’s, it appeared in French cookbooks, and in the 1900’s, it was baked in loaf pans. During World War II, it used carrots as sweeteners.

Mid to Later 20^th Century: The 1960’s saw cream cheese frosting become popular, and the 1972 New York Times recipe and The Silver Palate restaurant boosted its fame. Today carrot cakes are a popular alternative, any season. It has roots that draw people to enjoying in summer, and in winter–but different logic.

More Recently: Today, carrot cake incorporates various vegetables, with carrots being the primary ingredient, to create a distinct flavor profile that balances sweetness and savoriness. Several vegetables tend to be on the sweeter end of the taste spectrum or absorb the sweetness from other components. Among these ingredients are:
