The History:
The Cheese Lover: A person who loves cheese is called a turophile. The term comes from the Greek word tyros, meaning “cheese”, and the suffix -phile, meaning “lover”. The word turophile first appeared in the 1930’s but gained popularity in the 1950’s. A cheesemonger is a cheese expert specializing in selecting, storing, and presenting cheese. They also help people choose cheese based on their preferences. There are at least 1,400 varieties of cheese.

The Perfect Cheese: The basic principles of making cheese are simple. First, let the milk sour to coagulate the casein protein. Then, separate the curds from the whey. The curds are salted and aged. Bacteria, enzymes, or fungi can be added during this process, along with herbs and spices for flavor. The nutritional value of cheese varies; cottage and mozzarella are lower in fat and calories, while mascarpone and cream cheese are higher, making desserts rich and creamy.

Celebrated: The holiday is celebrated every year on January 20th.
