A Brief History:
Origination: Peach pie’s recipe, suitable for both peach and apple pies, originates from Lettice Bryan’s The Kentucky Housewife, which was published in 1839. Alongside Mary Randolph’s The Virginia Housewife (1824) and Sarah Rutledge’s The Carolina Housewife (1847), The Kentucky Housewife is recognized as one of the three seminal “southern housewife” cookbooks. The books are frequently regarded as some of the earliest regional cookbooks in America; while they encompass a diverse array of recipes, they predominantly emphasize traditional southern cuisine. Similar to many cookbooks of that era, numerous recipes by Mrs. Bryan lack specificity regarding quantities, temperatures, and cooking durations. Although she provides precise measurements for the flour and butter in the pie crust, the instructions for the fruit filling are notably imprecise, indicating only “some” and “a very little.” Consequently, the remainder is left to the discretion of the cook.
More Recent Origin: Peach pie is nearly incapable of being unpalatable, and this particular one is no different. If I were to prepare it according to my preferences, I would likely opt for fresh peaches rather than cooking them beforehand, and I would certainly incorporate some cinnamon and lemon juice in addition to the nutmeg and cloves—these are merely minor adjustments to align with my palate. I found it quite enjoyable to decipher Mrs. Bryan’s ambiguous instructions, which lacked any specific measurements or ratios. It is fascinating to discover that the method of making peach (or apple) pies has remained largely unchanged for almost two centuries. The combination of fruit, sugar, and a few spices constitutes the quintessential pie recipe, a tradition that has endured over time.
