A Brief History:
Origination: The exact origins of fudge are a subject of debate, but there have been similar recipes since the era of 1900 B.C. It is widely believed that the current styles of recipes have emerged in the United States during the 19th century. According to the most commonly accepted account, fudge was unintentionally created in 1886 by a confectioner from Baltimore, Maryland. This confectioner supposedly made a mistake while preparing a batch of French caramels, resulting in the creation of fudge. The ingredients used in this accidental invention included boiled sugar, butter, and milk, which ultimately produced a smooth and velvety treat. Another theory suggests that a candymaker mistakenly handled caramel ingredients as if they were crafting fondant. Yet even another theory is that fudge may have also been brought to America by immigrants from these countries
Evolution of the Fudge Brownie: The chocolate brownie is believed to have been created in Chicago in 1893 at the Palmer House Hotel. Legend has it that Bertha Palmer, the hotel owner’s wife, requested the pastry chef to invent a convenient dessert for the Columbian Exposition World’s Fair that could be consumed easily from boxed lunches. The outcome was a rich, chewy chocolate square topped with walnuts and apricot glaze, later named the Palmer House Brownie. To this day, the Palmer House continues to offer the brownie using the original recipe.
Difference Between Fudge & Brownie: The fudge on a brownie is the usual top layer that is dense, and mostly like caramel in consistency. The brownie layer is a cake-like consistency, usual the bottom layer, and usually sweeter and less dense in consistency. The brownie can come without a fudge layer, and also the fudge often comes without a brownie, the recipes and thickness of each layer can make a large difference between flavors and consistency.
More Recently: Another hypothesis suggests that the origin of fudge can be attributed to Emelyn Battersby Hartridge, a student at Vassar College in New York. It is believed that Hartridge obtained a recipe from her classmate’s cousin, which she then popularized. Despite that lack of a better origin to pin down, fudge continues to be a great staple in the dessert category, and enjoyed worldwide, with many different recipes and renditions.
