A Brief History:
Origination: Strawberry shortcake has a long history that dates back to 1588 in England. However, it was not until the 1800s that strawberry shortcake was introduced to the United States. The credit for the first recipe for strawberry shortcake in America goes to Eliza Leslie of Philadelphia, who included it in her cookbook The Lady’s Receipt-Book. Although Leslie referred to them as “strawberry cakes,” her recipe played a significant role in popularizing this delightful dessert in households across the country.
More History: By the late 1850s, Americans started incorporating a strawberry sauce along with fresh strawberry slices onto their shortcakes. Even to this day, this cherished tradition continues to be celebrated nationwide., and this delectable dessert became a beloved choice during the month of June, as it was often enjoyed during strawberry shortcake parties held to commemorate the strawberry harvest.

More Modern History : More recently, the strawberries are sliced, combined with sugar, and left to rest for approximately one hour until they have released an ample amount of their juices. Subsequently, the shortcakes are divided, and the lower portion is adorned with a generous layer of the strawberries, along with their juice and a dollop of whipped cream. The upper portion is then reassembled, and additional strawberries, juice, and whipped cream are delicately added to complete the delectable creation.
Why a Day on June 14th? June 14th marks the height of strawberry season. Although strawberries are available year-round nowadays, the most delicious ones are harvested from April to June. The vibrant red berries during this period are exceptionally sweet and flavorful. Incorporating them into a shortcake biscuit or sponge cake creates a simple and revitalizing summertime treat.
