A Brief History:
Origin of Peanut Butter: Peanut butter was first made by John Harvey Kellogg in 1895 for a method of providing protein for those who were older and needed nutrients through food where people were not able to chew meat. Peanut butter was first presented and sold publicly in the year 1904 at the St. Louis World Fair at C.H. Sumner’s concession stand. In 1922, Joseph Rosefield invented the process of the consistency of peanut butter we know and love these days through the process of homogenization, and the process of being able to keep the peanut oil from separating from the peanut solids. Joseph later sold that patent to the Peter Pan company, but then went into business for himself selling the Skippy brand of peanut butter through Rosefield Packing. The company supplied peanut butter as military rations during World War II.
The Process of Manufacture: Peanut butter is packed with protein and is rich in healthy monounsaturated fat. Peanut butter is made with two grinding steps, first to reduce the peanuts to a medium grind, then the second to a fine and smooth texture. To make chunky peanut butter larger peanut pieces are incorporated by varying grinding processes, or by removing one of the ribs from the grinder.
Very Nutritious Indeed: Peanut butter is a good source of nutrition and energy, fortified with vitamins E and B6, plus the minerals niacin, calcium, potassium and iron.
