A Brief History:
Origination: The history of cheesecake can be traced back over 4,000 years ago to ancient Greece, where the earliest known cheesecakes were made on the island of Samos. These early cheesecakes were created from patties of fresh cheese that were flattened with flour and honey, then baked on an earthenware griddle. The Greeks viewed cheesecake as a valuable source of energy and offered it to athletes at the inaugural Olympic Games in 776 BC. Additionally, cheesecake was a popular choice for wedding celebrations.

United States Evolution: Here is points in American history concerning cheesecake:
- In 1872, a dairy farmer from New York developed cream cheese in an attempt to imitate the French cheese Neufchatel.
- During the 1920’s, Arnold Reuben incorporated cream cheese into cheesecake, resulting in the creation of the New York-style cheesecake known for its luxurious and creamy consistency.
- Kraft then launched packaged cream cheese in 1928, contributing to the widespread popularity of cheesecake recipes.
- By 1954, Lubin started selling frozen cheesecakes throughout the United States, introducing Jewish-style pastries to various communities. Today, cheesecakes can either be baked or prepared with uncooked cream cheese on a crumbled cookie or graham cracker crust.
Later 20th Century: The introduction of the springform pan during the 20th century transformed the process of making cheesecakes, enabling a simpler extraction of the fragile cake from the pan without causing any harm. Moreover, the addition of different toppings and flavors like fruit compotes, chocolate, and caramel expanded the variety of cheesecake options available. In general, the evolution of cheesecake from a basic ancient treat to a cherished luxury enjoyed by individuals from various cultural backgrounds worldwide is evident in its history. Cheesecake was celebrated quite frequently on television, such as that it the show “The Golden Girls”.
Philadelphia Cream Cheesecake: The Philadelphia-style or Philly-style cheesecake is another popular type of cheesecake in the United States. It should not be mistaken for Philadelphia cream cheese, even though it is commonly used in the recipe. This cheesecake has a lighter texture and a deeper, slightly tangy flavor compared to a New York-style cheesecake. Unlike the New York style, there are no sour cream, heavy cream, or other mix-ins in a Philly Cheesecake. Typically, it has a graham cracker base and is made with cream cheese, vanilla, eggs, sugar, and lemon juice, and nothing more. Despite the added fats, New York style cheesecake can sometimes taste dry.
