This is a day just for the peanut butter & jelly lover! How deliciously dandy! Now some history and other information!

A Brief History of Peanut Butter & Jelly:
Origin of Peanut Butter: Peanut butter was first made by John Harvey Kellogg in 1895 for a method of providing protein for those who were older and needed nutrients through food where people were not able to chew meat. Peanut butter was first presented and sold publicly in the year 1904 at the St. Louis World Fair at C.H. Sumner’s concession stand. In 1922, Joseph Rosefield invented the process of the consistency of peanut butter & jelly we know and love these days through the process of  homogenization, and the process of being able to keep the peanut oil from separating from the peanut solids. Joseph later sold that patent to the Peter Pan company, but then went into business for himself selling the Skippy brand of peanut butter through Rosefield Packing. The company supplied peanut butter as military rations during World War II. Jelly all started out as the recipe for jam in the first known cookbook; De Re Coquinaria (The Art of Cooking). It’s attributed to Marcus Gavius Apicius dating all the way back to the fourth century A.D. in Rome.

The Process of Manufacture: Peanut butter is packed with protein and is rich in healthy monounsaturated fat. Peanut butter is made with two grinding steps, first to reduce the peanuts to a medium grind, then the second to a fine and smooth texture. To make chunky peanut butter larger peanut pieces are incorporated by varying grinding processes, or by removing one of the ribs from the grinder. Whether in the home kitchen or in a modern food processing plants, the procedure is essentially the same. Fruits are chopped and cooked with sugar and pectin until a gel is formed. The jam or jelly is then packed into sterilized jars. 

Very Nutritious Indeed: Peanut butter is a good source of nutrition and energy, fortified with vitamins E and B6, plus the minerals niacin, calcium, potassium and iron. Jelly, while being tasty actually has a modest amount of potassium, which is an important mineral for human absorption.

Statistics For Peanut Butter & Jelly: Nearly half of Americans regularly eat PB&J sandwiches, according to the survey. Fifty-three percent say exactly half peanut butter and half jelly is the perfect ratio for a sandwich. Fifty-nine percent prefer the creamy over crunchy texture of peanut butter. Peanut butter sales are pretty high. Sales are in the billions per year. This leaves a great marketplace. Jelly also makes a high mark in the marketplace as well.   • Americans eat approximately 700 million pounds of peanut butter per year
  • Americans eat approximately 3 pounds of peanut butter per person per year.
  • 14% said they eat peanut butter and jelly sandwiches about once a week. 17% eat them a few times per month. 12% eat them just about once per month. 27% said they rarely ever eat peanut butter and jelly sandwiches.
